With the Irish weather spoiling us at the moment, I am looking for a lighter food. I used to make these Vietnamese spring rolls on a regular basis. They are easy, you don’t really need a recipe for it, they are beautiful to look at and just so delicious! you can deep fry them for a less fit version, and they will be absolutely divine!
Vietnamese spring rolls
This is more of a guidance rather than actual recipe, as all combinations will work well here. Even wrapping fruit will be beautiful little snack which all your colleagues will envy you!
Ingredients
- rice paper
- rice noodles cooked
- cooked pieces of chicken
- microherbs
- fresh chilli, chopped
- lime and lime juice
- soy sauce
- sesame oil
Instructions

First, prepare the rice noodles according to the instruction on the package and get big plate filled with warm water ready to soak rice paper.

Soak rice paper one at a time for 15s, you will know when it is ready when it turns soft. Take out of the water and spread on the dry surface.

Season chicken with soy sauce, sesame oil and lime juice

Place a portion of noodles, some chicken and herbs, chilli in the middle of the rice paper and wrap both opposite sides to the middle. Then roll the other sides.

Serve with some lime and dipping sauce. Sweet chilli works very well here.
