Days are cold and dark this time of the year. I am looking for more comforting food. Food that will make me warm and will be like a hug in a bowl. I really like soups and still don’t know why I don’t make them more often. My kids favourite chicken soup is lovely but sometimes I want something more bold.
Sweet potatoes are excellent soup ingredient. I wanted to give them little more smoky flavour and I thought about combining it with chorizo. I like my food spicy but if you prefer milder flavours you can choose chorizo without any spices. I have also sprinkled it with my recent obsession – gomashio – but you can omit it.
Sweet potato and chorizo soup
Ingredients
- 200g spicy chorizo
- 1 onion chopped
- 1 clove garlic chopped
- 1 kg sweet potatoes roughly chopped
- 1 carrot chopped
- 1.5 litre vegetable stock
- 0.5 tsp smoked paprika
- pepper to taste
- gomashio optional

Cut chorizo into cubes and fry it without any oil in a large pan. Chorizo is fatty enough and will release lots of oil.

When chorizo is crispy, scoop out about half of it and reserve for later.

Add onion and garlic to chorizo in the pan and fry on medium heat for about 5 min until golden.

Add chopped sweet potatoes and carrot and fry for a couple of minutes just to coat all vegetables with the fat from chorizo.

Add stock. Cover and cook until all vegetables are soft. It should take about 25-30 min.

Blend the soup until smooth. Adjust to taste with smoked paprika and pepper. I don't think you need salt as chorizo is salty already but taste it and season to what you like.

Serve with reserved fried chorizo cubes, gomashio and some crusty bread.
