Christmas is coming and what the better way to start feeling festive than with some baking! Gingerbread is probably one of the most popular bakes this time of the year and the recipe below is my Mam’s one. Make sure to get kids decorating! They will love it!

Festive Gingerbread Biscuits

Dig out all your festive cookie cutters, get kids involved and have fun!

Ingredients

  • 185 g unsalted butter at room temperature
  • 0.5 cup light brown sugar
  • 0.5 cup honey
  • 1 egg
  • 1 egg yolk
  • 500 g plain flour
  • 0.5 tsp bicarbonate soda
  • 0.5 tsp baking powder
  • 1 pinch salt
  • 2 tbsp mixed spice you can mix cinnamon, ginger, cloves, all spice instead

Instructions

  1. Melt the butter with sugar and honey over low heat. Do not boil. Once melted, let it cool down.

  2. Beat in the eggs (make sure the mixture is not too hot or you will end up with scrambled eggs).

  3. In a big bowl combine flour with salt, bicarb and baking powder and all the spices. Add wet ingredients and mix well with a wooden spoon. Once the mixture will have a consistency of a dough, you can knead for couple of minutes just so all ingredients are combined well. Cover with cling film and leave to rest in the fridge for about an hour.

  4. Preheat the oven to 180C (fan assisted).

  5. Roll out the dough to about 0.5 cm thick and cut whatever shapes you like. Bake for about 8 minutes until golden brown. Transfer to wire rack to cool completely before decorating with sprinkles and icing.
