If you know me personally you know that I am not myself without a cup of coffee in the morning. Well…not only in the morning… I just love this strong, one of its kind smell. It is almost like a magic potion that promises you super human powers after you drink it.
Did you know that some people metabolise coffee in different way that others? If you notice that you are overly hyper and anxious, you may need to be careful with this brew. But if you are like me and can drink it just before going to sleep, you will appreciate this amazing coffee cake turned into muffins!
Maybe this coffee cake muffins recipe will not change you into Captain America, but it will definitely brighten up your day! And that is kind of special too, right?
Coffee cake muffins
Coffee cake transformed into muffins. Easy to grab and go or just sit down and relax with your favourite brew.
Ingredients
For the muffins
- 1.5 cup self raising flour
- 0.5 cup dark brown sugar
- 1 tsp baking powder
- 1 tsp cinnamon
- pinch salt
- 0.75 cup strong coffee cold
- 1 egg
- 0.3 cup vegetable oil
For the crumble
- 0.25 cup plain flour
- 0.25 cup dark brown sugar
- 1 tsp cinnamon
- 3 tbsp cold unsalted butter
For the vanilla icing
- 0.5 cup icing sugar
- 1 tsp vanilla paste
- 1 tbsp milk or water
Instructions
To make muffins

Preheat the oven to 175C, line muffin tin with paper cases.

Mix flour, sugar, baking powder, cinnamon and salt in one bowl

In another bowl, mix the egg with oil and coffee

Pour wet ingredients into dry and roughly mix. Some lumps are advisable.

Pour to prepared muffin tin.
To make crumble topping

Using fork, mix flour, sugar and butter until it makes crumble ( coarse sand consistency). If the crumble is too sticky, add more flour.

sprinkle the crumble over muffin batter. Bake for about 20-25 min until golden.

Leave in the tin for 5 min before pouring icing.
To make the icing

Mix all ingredients in the glass. If the icing looks too thick, add more liquid. Pour onto warm muffins.
