My fascination with Japanese cuisine continues:) This chicken yakitori is celebration of simplicity, but don’t think it is nothing special! This dish is full of asian flavours, sticky and sweet, salty and tangy. Simple chicken has just been given the extra dimension. Invite some friends for a bbq and make it. They will love it!
Chicken Yakitori
Ingredients
- 4 boneless chicken thighs
- 2/3 cup soy sauce
- 1/2 cup water
- 2 tbsp mirin
- 2 tbsp rice wine vinegar
- 1/2 cup brown sugar
- 1 tsp ginger grated
- 1 clove garlic grated
- 3 tbsp cornstarch
- 4 soaked bamboo skewers
- sesame seeds
- spring onions
Instructions

In the pot, mix soy sauce, mirin, water, vinegar, sugar, garlic, ginger and starch. Slowly bring to the boil and mix constantly. Boil until sauce thickens and take off the heat. Reserve some for dipping and use rest for basting.

Cut the chicken into cubes and thread onto the skewers.

Heat the grill, place the skewers on and brush with the yakitori sauce. Continue to turn the chicken from side to side and baste with the sauce as you go. It should take about 15 min in total to cook the chicken.

When the skewers are ready, sprinkle with sesame seeds and spring onions and eat straight away.
